Check out this awesome At Home Recipe! These Dark Chocolate Protein Cupcakes (with Peanut Butter Greek Yogurt Frosting!!) will be a deliciously sweet post-workout reward!
INGREDIENTS FOR CUPCAKES:⠀
- ½ cup of your favorite Rivalus chocolate protein powder (We suggest Rival Whey Warm Ups Hot Cocoa!)
- ½ cup low fat (or nonfat) greek yogurt
- ⅓ cup unsweetened almond milk (or other milk)
- ⅓ cup unsweetened cocoa powder
- ½ cup gluten-free oats (or oat flour)
- ½ cup liquid egg whites
- 2 Tbsp peanut butter
- ½ Tbsp stevia flavoring drops (or 2-4 packets regular stevia)
- ½ tsp baking soda
INSTRUCTIONS:⠀
- Preheat oven to 350 degrees F
- Blend all ingredients until smooth, and no lumps
- If mixture is too dry, add a little more almond milk
- Fill baking cups about 2/3 full with cupcake mix
- Bake for 35-40 minutes, or until toothpick come out dry
INGREDIENTS FOR FROSTING:
- ½ cup low fat (or nonfat) greek yogurt
- 1 ½ Tbsp creamy peanut butter
- 1 Tbsp cream cheese
- 1 Tbsp maple syrup
- 1 tsp vanilla extract
INSTRUCTIONS:⠀
- Mix all ingredients together
- When cupcakes are cooled, frost generously
- Add any desired toppings (sprinkles, cocoa powder, etc.) and enjoy!
