Maple Pumpkin Protein Blondies

Wet ingredients:
- 1 can of canned pumpkin
- 1/3 cup walden farms pancake syrup
- 1 tbsp melted butter (I used earth balance olive oil for less fat)
- 1 tbsp archer farms pumpkin spice sugar free coffee syrup (sold at target)
- 1/2 tsp vanilla extract
- 1/2 tsp maple extract
- 1 cup of almond milk
- 1 egg
Dry Ingredients:
- 3 scoops of rivalus promasil vanilla protein (a protein blend or casein works better for baking than whey)
- 1 cup oat flour
- 1/2 cup of coconut flour
- 1/3 cup of stevia
- 1 tsp of baking powder
- 1/2 tsp of baking soda
- 1 tsp of cinnamon
Mix wet ingredients all together in one bowl and dry ingredients in separate bowl then mix wet and dry ingredients together and pour into a sprayed baking dish. Bake at 350 for about 30ish minutes until toothpick comes out clean. Leave to cool for about 20 minutes then slice into desired serving size. I sliced my batch into 10 Blondies and the macros for 1 blondie are 12 protein, 17 carbs (5 from fiber) and 4 fat. Enjoy this perfect fall time treat guilt free!
